This is an older series, but it is still beyond the best documentary covering World War II:

It's from 1973-1974, but still the best war documentary I have ever seen.

God of Ramen.

I saw this documentary a few years back at a Japanese film festival. it chronicled the life ramen house owner, Kazuo yamagishi.
The whole bit was just a delight to watch.
