what i uselly do is play a game normal leave it for a while then add mods then it gets really fun.

Path of exile, hands down, especially with their content creation and upload schedule, the game never really gets old.

I'd pick Minecraft, you can spend an absurd amount of time in that game and still not see or do everything it has to offer.

Probably csgo. Since the high blood pressure it causes I would die young so I wouldn't have the chance to get bored.
