The Witchery mod is a pretty good one, as it uses the environment a lot to make content. You can draw magic circles, summon demons, create rituals. Overall its prettyinteresting.

the new create mod is really good. you don't go into a gui to produce ingots or whatever. you build your machines yourself with your own creativity.
