Currently imo for pvp is 1.8.9 and just for building/having fun would be 1.17/1.18

Easily 1.12.x as it is the most recent & stable version for mods and servers.

for mods IMO 1.12
and for speedrun 1.16
and for FPS alpha version

around 1.5 - 1.8 has like the best nostalgic mods if you grew up playing minecraft
