My personal opinions, as a childhood fan of Dragonball and Dragonball Z:

DBS insults DBZ and DB.

How?

DBS ruined the plot-- It focuses only on Goku and Vegeta now, mostly only Goku for that matter.
It gave no story to the Z-Warriors!
Especially ruined Gohan (worst part--the guy who took on frieza,cell and was the most powerful saiyan ever gets bashed by one of frieza's weak soldier),
Even others seem to be useless now.
Lame transformations--They're just color changes
I mean like seriously take a super saiyan Goku from frieza saga and turn his hair to blue and call it a lame name: SSGSS?!
Take frieza, again from frieza saga and change his colors to gold/purple and call it a lame name: Golden Frieza!?
Transformations don't show any new powers.
Each transformation had a new ascended power that the character used to get. Take Goku's example:
Saiyan: Spirit Bomb, Kaioken
Super saiyan: Super Kamehameha
Bad animation (movements), worst Art-work.
Ruined most important fights.
It is almost full of fillers.
One episode fully showing just 3 punches and saying that the universe trembles! (Beerus vs Goku)
One episode having all recaps, nothing else to show.
New characters don't make the show interesting.
Back-stories are not explained well.
Only making one character over-powered (Beerus/Whis)
Their character designs are sooo bad, not at all appealing.
Toriyama ran out of ideas and took some from other cartoons like:
Winnie the pooh's look as another universe's fighter!?
Frieza look-alike
One more saiyan from nowhere!?
One mutant that looks like cell+frieza
One lame looking robot. (None seem to be making anything interesting)
DBZ had the story on stake, we used to watch for what happens next. DBS is childish in my opinion, its like the cartoons that are made for small kids where nothing is taken in a serious manner.
The most part of every episode concentrates over Bulma's talks and fillers, characteristics of the surrounding (background) [making the characters look like a child has drawn them]
Fights have no serious impact. It is obvious to whose gonna win at the end, its all predictable! And all credit has to goto Goku only. (I'm also a Goku fan, but DBZ had improved other characters so well like Gohan, Piccolo, Goten,Trunks, Gotenks]
These things cannot be overlooked from a very-good anime from 90's !

They make GT non-canon, but actually speaking it looks more promising in terms of character-design, focus on characters, animations and even the enemy look,back-story and design.

Edit: DBS has gotten a lot better since Universal Tournament Arc has started both in terms of plot and artworks.
