ovh cloud in my opinion if you would like a secure server with DDoS protection, but you should add some rules in firewall to make protection fully effect your server. Otherwise you can take a hyperfilter one.

im using an polish hosting called fiberhost.pl

I had experience with minecraft servers you probably want atleast 8GB with ddos protection. Graphics cards might help but not too much mostly servers use ram instead of the graphics card but still I would use a decent graphics card.

In my opinion, good hosting is enderchest.pl
