Besides Witcher 3, I really enjoyed Baldur's Gate 1+2. Just enjoyed the general story and felt drawn into it. Other than that KOTOR was great too. And Gothic I + II. Surely, those are older games, but they deserve a place in the Hall of Fame of good RPGs.
