manga that you wish to have anime

Dungeon Meshi would work great as an anime. It's one of the few fantasy that is not an isekai and actually faithful to the worldbuilding and creatures of the genre. Also all the food would look great animated. I would also love for Annarasumanara to be animated as a movie.
