Because when you watch it first time you're just into the film itself, trying to get the plot and etc. but when you're watching it for the second, third, fourth time you kinda know what's gonna happen and just paying attention to the details, how everything was made and so on and like when you see something new in a film you've already seen you're like: 'what, how did I miss that?'
