I have an s7 edge and a family member has a 7 plus so from my experience with both I'd say go for the 7 because updates are more consistent and people can't necessarily hack into your phone. One day I was super bored, so i took my s7 edge, got someone to change the lock so I didn't know it, then I reset it using the android boot menu thing, then once it was fully reset, it was still Google activation locked so instead of just signing into my Google account, I got onto the web browser through sending a command from my computer to the phone and downgraded the Google activation software through the browser with an installation file I had of an older version of the activation thing. This meant I was able to skip the Google sign in and activate part of setup. I was able to finish setup and use phone normally. This is a major security flaw. Took me 1 week to find it but only like 30mins after I did it first time. This means if anyone stole your phone they could reset it and sell it as used without any problems.
