Great Question.
2 main games that I really loved in my childhood (And still occasionally play today).

1. The Settlers 3. There is just no other colony building game like it. Conquering, expanding, infrastructure, and unlike most other games you actually see everything happening in the world. You don't just build a sawmill and it generates wood out of thin air; you need a lumberjack and a sawmill and you see settlers transporting the wood logs from the lumberjack to the sawmill, and the milling dood taking that wood log and turning it into a plank, and then it gets transported to a storage area or just stays there, either way the only resources you have are the ones you actually see in the world. Makes the game very immersive and still basically the spearhead of the genre; later settlers games became too cinematic, the art style changed, the playstyle changed, etc.

2. Star Wars Episode 1 Racer. Its basically a driving game but using the podracers from Star Wars Episode 1: Phantom Menace. Its a very fun little game with 28 different tracks and about 20 Podracers or even more to choose from, with upgrading of parts to change podracer statistics, tracks that have shortcuts, and visually quite stunning considering its a 20 year old game. Also unlike other driving games, SW Ep1 Racer has some really fast racing going on. You don't drive a car at 140 km/h. You drive a podracer at 600 km/h. So its much more fast paced than any other racing game I know (also in the Zero-G tunnels you can go faster than 1000 km/h). Training mode also has an option to drive the tracks mirrored which adds for some variety. Wish there was a reverse mode for the tracks as well, but that wouldnt even work on those tracks that have things like jumps in them etc.
