In my experience, it's best to find the overall theme of what you're attempting to convey through your builds. For example, if you're creating an old english village, look at images of 1600s - 1700s, and identify what kinds of blocks you'd be able to use to make the build look like what's in the picture. Magical frog with wings? What blocks would best convey the look of wings at the scale you're going for? How much detail in the frog are you looking for?
TLDR; Use references, identify what's best to use in the style of what you're going for.
