Blocksmc.com is good for minigames, good community, minegames how on Hypixel, but it for EU

holyh.cf is good for hardcore factions too. Most players are spanish or italian so there's 3 lots of languages on the server.

The best non premium server I would recommend is "play.jartexnetwork.com" They have a lot of gamemodes such as Bedwars, Skywars, Factions, Prison, Skyblock etc.

Any advice for a newb what could I expect from online servers ? I mean are they in some way modifying the core gameplay or it's mostly about custom maps, creatures ?

Blocksmc are pretty chill dudes, just an EU server so lots of lag

blocksmc.com for sure!but i think buy a premium account is a better way to enjoy more games

id say hypixel, all the ranks only add cosmetics and there is nothing extra you need to pay for
