Changing UI in MFPS asset Unity

Can any one tell me how to completely change the Menu UI of MFPS asset rather than just moving few things here and there

You could try to create your own UI from scratch and then attach all the required MFPS scripts to your UI elements. I never tried it with MFPS, but it worked for other Unity templates that I tried.
