I would learn php 7 just because its going to grow more and more in the future and some hosts are switching to it. Even though a lot of different hosts and cms's use php 5. I still suggest php 7 because in the future that is what will be used and then you will be prepared.

Better you should switch to php 7.x because is updated and faster, but depends on the cms that you are going to use/or use.

I have some problem with php 7.0 -> it's no more support mysql (it only support mysqli) so some old scrypt doesn't work anymore

The more recent the PHP version, the more secured and suitable it is. Therefore, it is safe to say that PHP 7 is better.

The basis for language updates is more to do with security than anything else. If there were no new features I'd still go for the latest one simply because it's targeted to be more secure.
