I would definitely go with Attack on Titan, though they have slowed down the releases and the creators are more than demotivated to further work on them.

All of Hagio Moto's body of work is so intensely emotional. Especially A Cruel God Reigns, one of the best manga I read that tackles the topic of trauma.

I have close to a thousand read mangas an when people ask me for recommendations the first that comes to mind is Monster (Naoki Urasawa).
Actually, everything from Naoki Urasawa is good.

If you have nostalgia for old west RPG, you need to give Dungeon Meshi a try! It's also super fascinating the artist Ryoko Kui has drawn their own portrait pack for Baldur's Gate 1 and 2 in their anime fantasy style.

For engaging thriller, try Golden Kamuy. It's set in historical Japan Hokkaido where criminals and rogue soldiers are hunting each other to find clues for a treasure of gold, that's tattooed into prisoners' (some of them are crazy!) skin who escaped and now roam wild in Hokkaido!
