I want to watch a long anime and my friends recommended One Piece, but because there are so many episodes, I don't know if the beginning is good enough to engage me.

IMO it's pretty good, pacing is a bit off at first but that to be expected with old anime

It gets really good at water 7 but it does get good earlier

it's decent from the beginning, gets very good around the arlong/fishman pirates arc, and gets better with every arc after that

Yea its tbh pretty good from the start itself so its worth it

I enjoyed all of it, but the beginning is pretty slow, and there are some arcs that can tend to be slow as well. it basically comes to preference.

From the start of the show I enjoyed it. The first day I started watching it, I just layed on my bed all day just watching it. From there I would just be watching like about 10-15 episodes a day. But some people don't really enjoy it from the start, so I guess you'd have to give it a try and see for yourself.
