Im personally enjoying myself some Fallout 4 and Fallout : New Vegas right now, both of those ( of course especially with mods ) are a banger.

Borderlands 1 with the boys was wild

I would definitely say Skyrim I beat the story mode pretty quickly but there's still a lot you can do after beating the game. And its also defied the test of time
