You may have gotten this suggestion already within these 38 pages, but I say Beastars. The animation is fantastic, the depth the show goes to explore nature vs nurture, instinct vs teaching, the id and discipline, it's all told so beautifully.

If you like shows about prison, I can recommend Vis A Vis (Spanish) and Avlu (Turkish).
