Depends on the kind of game you want. I think they're both really a lot of fun and I've played both for hundreds of hours.
I'd say RDR2 if you're looking for a more artistic, emotionally deep, mature storyline, and GTA5 if you want a mature, but outlandish satire of modern American culture with some satisfying and gratifying storyline events. The ability to play 3 very distinct characters whose stories all intertwine in a very compelling and fun way is also a lot of fun.
Both are on the violent side. RDR2 is on the realistic side of violence, and GTA5 is again satirical and outlandish, but still impactful.
Both offer a load of exploration options. The maps are both very open and (almost) fully traversable after you get through the opening tutorial/introduction.

Anyways, I love GTA, it's my childhood, so I obviously have to go with GTA 5, BUT RD2R is one of the most cinematic games I've played in a WHILE, so it really depends on the experience you want, because GTA 5 is a little more lighthearted and comedic compared to red dead, so it really just depends on the player.

Man I still think about red dead 2 almost daily. That story was just hitting me just right at the right time. I think I would have a hard time going back to it. It's one of those games I wish I could play for the first time again.

This is definitely the correct answer! RDR2 has an incredible story that goes very deep, so does the world. GTA has a great story but it's more like a modern day "action film" in that sense.
