How to create this style?

Hi guys, need a little help if anyone can!

I'm looking to create logos like these shown here https://hunteranson.com/store/p/hyper-script-typeface but every time i offset the path to outline the text it'll outline all of it, not just the outer shapes. Tried a few different ways and still haven't been successful. Any tips would be appreciated!
