I absolutely love Breath of the Wild, but that's probably been suggested a few times. NMS is a great one too, and if you want more of an adventure type one, I've been enjoying Portal Knights recently. Was free on PS+ earlier.

Red Dead Redemption 2 for me has been exactly like that.
I roam around looking for animals, hunting stuff, fishing, admiring the vistas. Such a well made environment. I would recommend Minecraft as well but you probably already played it. (with mods of course)

The new loz breath of the wild. Breathtakingly beautiful, super fun and chill, with a great story so far.

Farming Simulator, Green Hell this last is a good open world surival game with nice graphic.

No mans sky is a good one but its not my cuppa tea
