I want to build a media server and I do not want to need a gaming console to operate this and connect to the TV. What other options does everyone use to communicate between the TV and the media center?

Just get a raspberry pi, it's decent enough to act as a streaming central. Also it has expendable storage.
your other option is an old PC

EDIT: You've posted this in "Introductions" mate.

Use an RPI4 or search for a refurbished server with low power consumption.

I have used raspberry pi3 for plex media server, the result is not so good. Maybe pi4 would be better. another consideration is the HDD size. U need to ensure enough power are operating on ur hdd. I tried exteral ssd with pi3 usb port, it seems like it is not enough.
