Cowboy Bebop is one that I watched and watched again recently and it's still great. The Netflix series was boring though.

Sailor Moon and Card Captor Sakura will forever be it for me I'm sure the Sailor Moon reboot from a few years ago is great (I've heard it is) but the 90's art style is so nostalgic that I can't bear to watch something without it.
