I'd be making the next version of "Electronics"... Someone has too.

I would probably play my guitar and make acoustic music instead of electronic.

I think we would learn to do without it quickly. If you cant imagine yourself living without electronics its probably a good time to take a week break haha

The scenario will eventually happen though due to violent solar storms (coronal mass ejections/solar flares) that'll literally fry the world's electronics, it's just a matter of when.

When it last happened in 1859 (when there were barefly any electronics) sparks were flying from telegraph machines, settings the telegraph paper on fire... they figure an event like that today would cost trillions in the first year alone and it'd take up to 10 years for the world to recover from it. They think storms of that magnetude occur every 500 years on average, so it's not beyond the realm of possibility that we could see it happen in our lifetimes.

It might actually be helpful to the majority of this planet, since it's mostly effecting our relationships with close friends, family, etc.
but this only applies on social networks, the rest of the electronics is actually a must in this time, can't imagine travelling a month on a camel or a donkey lul.
