What old game should be remade with 2021 graphics?

What old game should be remade with 2021 graphics?

Just graphics, or everything, like physics too?
I'd like to play a remake of GTA:SA perhaps, with a larger, more real-life sized map, with GTA 5 graphics/physics or better.
If not GTA, then some Fallout game like 3 or NV, or Diablo 2, or TES II: Daggerfall, which had a huge map. Imagine that map with Skyrim's Graphics! I'd be happy. Doesn't have to be 2021 graphics. (Besides, my PC would struggle, it's 5+ years old. :/)
I'd say Minecraft, but part of Minecraft is everything being blocky, so a modernized version would greatly alter/ruin the gameplay I suppose.

KOTOR 1 and 2. I absolutely loved those games and getting them with new graphics would be great
