Early Family Guy might be rather dated and tough to watch nowadays, but there are still some gems, and this was one of the first to move out of the normal sitcom conventions that it pretty much totally ignores today.

Rick and Morty. Brickleberry is just messed up lol. The others are classics but with Rick and Morty you dont know what to expect!

Shaman King, definitely. It is quite a childish cartoon but the message behind it and the intro song are just impressive.

I love to watch Dragon Ball Z and Flame of Recca, I realy miss this kind of anime.
