I had the same question a year ago when I was looking into doing the same. Best way I found was to watch youtube tutorials on which type of server would suit you, then look into what game type you wanted, and are the plugins out there for you to achieve this, then go look at servers , either free ones, or host it like I do.
All the information you need is out there in either google or youtube. But the final decision is yours.......

Starting by setting up one on your desktop could be a good idea instead of buying it on an hosting website which will take all your money
