Beauty, as they say, is in the eye of the beholder, all is subjective, and an individual experience. Having said that, my personal favourite is Elite Dangerous, and one that I haven't played, and don't own, is Red Dead Redemption 2. Having seen this through various trailers and You-Tube videos, I'm very impressed with the visual and sound qualities that the game has.

Sekiro just dropped and it looks decent on the graphics and is enjoyable. You might like it if you are into Dark Souls types of games or into feudal era Japan.

Skyrim but with the tropical mod. It looks incredible. The snow biomes look more like jungles and it's more sunny and warm.
Ori and the Blind Forest is nice too, but pretty hard on the eyes in some places.
A bit old (like 2006 old) but Lord of the Rings Online is HUGE and looks incredible.

Crysis 3 still looks awesome even though it is very old now.

The latest Assassin creed games have some stunning graphics, but honestly getting a highly modded minecraft experience with tons of shaders sounds just as good
