Are undecided between the two, what do you recommend? I have to create a server that houses a website in maximum security

go for apache, it's more complexe. It can help you with the security.

I'd choose nginx, because it needs less resources.

nginx is alot faster than apache but apaache is more resourcable and easier to setup

I'd recommend to go for nginx too. Overall performance is better

Go for apache, it's better and it is safe.. I highly recommend, my friend uses it

I'll always put Nginx above Apache in terms of security, performance, resource demand, and flexibility.

However if you want a strange 3rd option that isn't Apache or Nginx then I could recommend OpenResty which mixes Nginx with LuaJIT.

The only server I know that uses OpenResty is PornHub, so there's that.

I wouldn't recommend lighttpd, caddy, IIS, or any of those ghastly NodeJS servers.
