It should be fine but I'd be very careful with having a laptop plugged in for 24/7 for multiple weeks/months

This isn't nearly enough information, and some of it is unneccesary.

First, ram specs? (Cas, frequency, ram type etc)

Which CPU model? Just saying how many cores and giving a clockspeed doesn't work, what's more important is it's architecture and internal design.

Also what will you be doing with said server? How many people will be on it? What pllugin's will you have if any?

I thought GPU was much more important when it comes to CPU in terms of bitcoin mining?

Whether or not it is worth it would also depend on the cost of the power used to run versus the money made from mining. I suspect it won't be worth it. You should actually do the math and figure out the numbers .

Its 8gb ram, 1.80ghz 2 core CPU, and integrated GPU. Is this good enough for around 50 players max? (Note: its a old pc, dont use it anymore) Or should I build a desktop for hosting

It should work for maybe 30-40 Players..... 50 are too much for this configuration

Really depends on the type of server (some demand more resources than others), the number of plugins, etc.. but you might just be able to do it (if people complain about lag you'll have to get other hosting.
